* Exported from MasterCook Mac * Couscous with Feta, Green Onion, and Mint Recipe By : Bon Appetit 1/94, sent to EAT-L by Liz Post Serving Size : 8 Preparation Time :0:20 Categories : Main courses, vegetarian* Side dishes, salads* Quick dishes* Middle East* Make-ahead* Side dishes, starches* Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups water 2 cups couscous - - - - - 2/3 cup fresh lemon juice 3 tablespoons red wine vinegar 4 tablespoons Dijon mustard 4 cloves garlic -- minced 3/4 cup olive oil 1 bunch green onions -- chopped 1 15-oz can garbanzo beans -- drained 1 cucumber, peeled,seeded,chopped 1 3.8-oz can sliced black olives -- drained (optional) 1 bunch fresh parsley -- finely chopped 1/4 cup chopped fresh mint leaves 1/2 pound feta cheese -- crumbled Bring water to a boil in a heavy large saucepan. Mix in couscous. Cover and remove from heat. Let stand 10min. Mix lemon juice, vinegar, mustard, and garlic in a small bowl. Whisk in oil. Set aside. Prepare remaining ingredients. Transfer couscous to a large bowl; fluff with fork. Add green onions, garbanzo beans, cuke, olives, parsley, mint, and dressing to couscous; toss well. Add feta and toss gently.
