                          Quail in Wine-Herb Sauce

   12                    quail
    3      tablespoons   flour
                         salt and pepper
    1      large         onion -- sliced
    2      slices        smoked bacon -- diced
    1      clove         garlic -- crushed
    1      4 oz can      sliced mushrooms -- drained
    1                    bay leaf
      1/2  teaspoon      leaf thyme
      1/2  cup           beef broth
      1/2  cup           dry white wine
                         chopped parsley
 
 Coat quail with a mixture of the flour, salt and pepper.  Place onion slices in
  Crock-Pot; top with quail.  Cover quail with diced bacon.  Add remaining ingre
 dients except parsley.  Cover and cook on Low for 7 to 9 hours.
 
 Remove quail to a heated platter and sprinkle with parsley.  Thicken sauce, if 
 desired, and spoon over quail.
 
 Serves 6
