Pecan Pie Bars (without crust)
 
 1 Pecan Pie Muffin Mix
 2 eggs, beaten
 1 stick butter, melted
 
 Preheat oven to 350°, prepare an 8X8 square pan, by spraying with Bakers Joy.
 Combine all ingredients in mixing bowl; stir until blended. Pour into pan and
 bake for 20 minutes, let cool completely before cutting into small bars.  This
 works great if you do not have or do not choose to use mini muffin tins.
 
 Note: I think that you can get the muffin mix at any Wal-Mart although not
 carried all year round.
