                              POTATO PANCAKES

    3      medium        potato -- peeled and halved
    1      small         onion
    3                    eggs
    2      tablespoons   all-purpose flour
    1      tablespoon    chopped parsley
    1      teaspoon      salt
           dash          pepper
                         vegetable oil for frying
 
 Assemble and attach rotor slicer/shredder using fine shredder cone (no 1).
 Turn to speed 4 and shred potatoes and onion.
 
 Place eggs in bowl.  Attach bowl and flat beater.  Turn to speed 2 and beat
 1 minute.  Add potatoes, onion, flour, salt, parsley, and pepper.  Turn to
 stir speed and mix 30 seconds, until well blended.
 
 Heat a small amount of oil in a 12-inch skillet over medium heat.  Use 3
 tablespoons of potato mixture for each pancake and drop into hot oil.  Fry
 golden brown, about 4 to 5 minutes, on each side.  Serve immediately.
 
 Yield:  6 servings
