* Exported from MasterCook * Spinach And Mushroom Salad Recipe By : Nathalee Dupree, TVFN Serving Size : 1 Preparation Time :0:00 Categories : Dupree Salad Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds fresh spinach -- wash dry tear 1 small red onion -- sliced 1/2 pound sliced mushrooms 2 teaspoons Dijon mustard 1/3 cup red wine vinegar 2/3 cup vegetable oil -- or olive oil 2 garlic cloves -- crushed Salt and pepper -- to taste 6 slices bacon -- crisped and crumbled Place the spinach in a salad bowl or on a serving platter. Add the red onion and mushrooms. Whisk together the mustard and vinegar. Slowly whisk in the oil. Add salt and pepper to taste. Just before serving, toss the spinach, onions, and mushrooms with a portion of the dressing, adding more dressing as needed to coat the leaves. Sprinkle with the bacon. Serve immediately.
