1 lb ground beef, turkey or chicken
 1 pkg taco seasoning
 1/2-1 cup grated mozzarella (or your choice * should melt easily)
 *toppings can be anything of your choice.  I usually shred carrots and
 add diced tomatoes to the salad.
 Cook the ground meat according to taco seasoning package
 directions.  While meat is cooking, shred your cheese and prepare the
 salad.  Once you've finished the meat, add the meat to the salad,
 cheese and toppings (while still a little warm).  By adding warm meat,
 it will promote the cheese to melt a little.  Serve and enjoy.  Can
 also be accompanied with Nacho chips.
