* Exported from MasterCook * Creamy Chicken Salad with Nectarines Recipe By : Woman’s Day Magazine, July 1978 Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups diced cooked chicken 3 cups diced nectarines 1 cup thinly sliced celery 1 tbsp minced green onion juice of 1 medium orange (about 1/3 cup) 1/2 tsp salt -- or to taste 1/8 tsp fresh ground pepper 1/2 c heavy cream -- whipped stiff 1/2 c mayonnaise Crisp greens 1/4 c finely chopped walnuts In a large bowl, combine chicken, nectarines, celery, onion, orange juice, salt and pepper; set aside. Lightly combine whipped cream and mayonnaise and then fold into chicken mixture just to coat. Spoon onto plates or bowls lined with greens.
