* Exported from MasterCook * Grilled Chicken And Avocado Salad Recipe By : My own creation Serving Size : 4 Preparation Time :0:00 Categories : May 98 Reg 1 Sheryl D Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Chicken and Marinade 2 Lb boned and skinned chicken breasts -- julienned 1/2 Cup olive oil 1 Tbsp toasted sesame oil 2 Cloves garlic -- minced 1/2 Tsp fresh ginger root -- minced 1 dried hot Thai chili -- minced 1/2 Tsp salt Salad 1 Lb spinach -- bite-sized pieces 2 avocados -- peeled and sliced 2 tomtoes -- sliced 1/4 Cup croutons Dressing juice of two lemons 2 Cloves garlic 1 Tsp salt 1 Tsp freshly ground black pepper 1 Tbsp honey 1 Cup olive oil Mix olive and sesame oils; add minced garlic,minced ginger root, salt and minced Thai pepper in a nonreactive container. Marinate chicken breast pieces 4 hours or more. Drain marinade and grill chicken on a pre-heated grill until thoroughly cooked. Let chicken cool to room temperature. Blend lemon juice, garlic, honey salt and pepper. With blender running, slowly add olive oil and emulsify dressing. Divide spinich into four bowls. Top with grilled chicken pieces, tomato, avocado and croutons. Drizzle dressing over salad.
