* Exported from MasterCook * Curried Chicken Salad Recipe By : Miriam Podcameni Posvolsky Serving Size : 1 Preparation Time :0:00 Categories : Poultry Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 whole chicken breasts -- cooked in stock with 1 tbs curry 4 slices pineapple * -- diced 2 pickled cucumbers -- diced fine 2 ribs celery -- diced fine 3 to 4 tbs mayonnaise 1 tsp garam masala 2 tbs chicken broth9 From where c -- chicken was cooked 2 tbs curry powder 1 tbs raisins -- optional 2 tbs cashew nuts -- optional pinch cayenne salt and pepper -- to taste 1/2 tsp freshly grated ginger Cook chicken in chicken broth 1. Let chicken cool in broth then drain it.Saving 3 to 4 tbs of the broth 2. Cut it into bite size pieces 3. Mix together the rest of the ingredients and add to the chicken. 4. Chill - - - - - - - - - - - - - - - - - - NOTES : * If you don't find fresh pineapple, boil the canned with water and vinegar for 1 minute and drain.
