In a serving platter, alternate layers of slic ed tomatoes, onions, and cucumber. Drizzle with the Cilantro vinaigrette. Cilantro Vinaigrette: Put the lime juice, lime zest, cilantro, garlic and white wine vinegar in a ble nder . When the cilantro has broken down into a fine purée, start adding the oil . Test for tartness.
