* Exported from MasterCook II * Vegetable Rice Salad Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Pastas And Rice Salads To Post Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 C Water 1 C Basmati Rice 1 C Frozen Peas -- thawed 1 Bunch Watercress 1 C Cremini Or Button Mushrooms -- sliced 2 Green Onions (White & Green Parts) -- chopped 1 Unpeeled Carrot -- slice in thin rounds 6 Tbsp Herbal Vinaigrette Bring the water to a rolling boil. Wash and drain the rice; stir into the boiling water. Reduce heat to low and cook 15 minutes. While rice is hot, add peas, watercress, mushrooms, green onions and carrot and too for a couple of minutes. The heat of the rice will wilt the vegetables. Add the viniagrette and toss again. Serve warm or at room temperatures. Serves 6 Nutrition Info per serving: 160 calories, 40g fat, No Cholesterol, 220mg sodium.
