* Exported from MasterCook * Chilaquiles (Mexican Eggs) Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Mexican Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 corn tortillas 3 Tbsp. salad oil or butter 1/2 C. diced onions 1/4 C. chopped green chilies 1/2 Tsp. salt 6 eggs 1 C. shredded Jack cheese or Cheddar red salsa or green Cut the tortillas into strips 3/8 inch wide, fry over medium heat in oil or butter, stirring until crisp. Add diced onion, chopped chilies, salt and eggs and mix well. Cook stirring until eggs are partially set. Sprinkle with shredded cheese and continue cooking, stirring until eggs are cooked as you like.
