* Exported from MasterCook Mac * Rustic Well-Fried Beans (Frijoles Refritos) Recipe By : Lean Bean Cuisine by Jay Solomon Serving Size : 4 Preparation Time :0:00 Categories : Legumes Mexican Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup dried pinto, black or red kidney beans -- soaked and drained 1 tablespoon vegetable oil 1 medium onion -- minced 1/2 jalapeno chile pepper -- seeded and minced 1 teaspoon ground cumin 1/2 teaspoon salt 2 tablespoons minced fresh cilantro 2 teaspoons Tabasco sauce Place the beans in a saucepan, add plenty of water to cover and cook for about 1 hour, until tender. Drain, reserving about 1/2 cup of the liquid, and set aside. Heat the oil in a saucepan and add the onion. Saute for about 5 to 7 minutes, until tender. Add the jalapeno, cumin, and salt and cook for 1 minute more. Add half of the beans and a little of the reserved cooking liquid to the onion mixture and cook over medium heat. Mash the beans with a spoon, forming a course puree. Add more liquid as you mash the beans. Add the remaining beans and continue to mash the mixture.
